I’ve been meaning to make my own granola since we had it home-made at Fforest camp a couple of years ago, so today I have. I used the bbcgoodfood.com recipe as a basis, but scaled up and tweaked a bit.Recipe
6 tbsp rapeseed oil
340ml honey (I just use one jar of Tesco value honey)
2 tsp vanilla extract
1 tsp Ground Ginger
750g rolled oats
50g sunflower seeds
50g pumpkin seeds
300g chopped brazil nuts
Salt to taste
1. Heat oven to 150C. Mix oil, honey & vanilla in a large bowl. Add remaining ingredients except dates and mix well.
2. Tip onto baking sheets and spread evenly to about 1” deep. Bake for 25 mins
3. Remove and leave to cool. Transfer to a bowl and mix in dates before decanting into containers. Can be stored in an airtight container for up to a month.
It makes about 1.5kg, and works out at about £3.50 for the ingredients, so pretty good compared to dorset cereals granola at £3.99 for 600g.

The walnuts can do one though. Instead, this was a good way to use up the salted macadamias which were such a nice idea in theory but pretty grim in actuality. I think brownies are the workhorse of the treat world, equally suited to being passed around friends with coffee as heated up and teamed with vanilla ice cream for pudding.
